At Byodo Naturkost in Mühldorf am Inn, everything revolves around fresh, regional organic products. The company operates an organic food shop complete with an in-house gourmet kitchen and supplies, among others, wholesalers and the catering industry with organic food. “For ten years now, we have also been cooking for children here,” adds Marcus Hofer, Operations Manager at the Feinsinn organic shop and gourmet kitchen. Every day, Byodo delivers around 1,700 meals to kindergartens, schools and businesses – always with a focus on freshness, regional products and seasonal ingredients.
Most meals are delivered using the cook-and-chill method and reheated at the facilities at the desired time. “Our aim was to demonstrate with our own kitchen that 100 per cent organic food is also achievable in institutional catering,” says Hofer. In the dishwashing area, it was particularly important to him to reduce the workload on staff, as a kitchen of this size generates a considerable amount of wash ware items.
